  • ½ cup unsalted butter, melted
  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • ½ cup pumpkin puree
  • 2 teaspoons pumpkin pie spice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract and sour cream until combined.
  6. Divide the mixture in half, adding pumpkin puree and pumpkin pie spice to one half.
  7. Layer the mixtures in the springform pan, swirling them together to create a marbled effect.
  8. Bake for 60-70 minutes, until the center is set but still slightly jiggly.
  9. Turn off the oven, crack the door, and let cheesecake cool for 1 hour.
  10. Refrigerate for at least 4 hours or overnight before serving.
