- 1 pound boneless, skinless chicken breasts
- 4 slices turkey bacon
- 1 can white beans, drained and rinsed
- 1 can diced tomatoes with green chilies
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 cups chicken broth
- 1 cup corn, frozen or canned
- Salt to taste
- Pepper to taste
- Fresh cilantro for garnish
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
- Add onion and garlic to the pot; sauté until softened.
- Stir in the cumin and chili powder.
- Add chicken breasts, chopped bacon, white beans, tomatoes, chicken broth, and corn.
- Bring to a boil, then reduce heat. Simmer for 20-25 minutes, or until chicken is cooked through.
- Remove chicken, shred, and return to the pot.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.
Notes
- This chili can be made in advance and tastes even better the next day.
- For a spicier version, add diced jalapeños.
