White Chicken Chili

A delicious and easy-to-make White Chicken Chili that features the savory flavor of turkey bacon.

  • 1 pound boneless, skinless chicken breasts
  • 4 slices turkey bacon
  • 1 can white beans, drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 cup corn, frozen or canned
  • Salt to taste
  • Pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. Add onion and garlic to the pot; sauté until softened.
  3. Stir in the cumin and chili powder.
  4. Add chicken breasts, chopped bacon, white beans, tomatoes, chicken broth, and corn.
  5. Bring to a boil, then reduce heat. Simmer for 20-25 minutes, or until chicken is cooked through.
  6. Remove chicken, shred, and return to the pot.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh cilantro.

Notes

  • This chili can be made in advance and tastes even better the next day.
  • For a spicier version, add diced jalapeños.
