  • 2 tablespoons cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 2 tablespoons strongly brewed coffee
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another large bowl, cream together butter, granulated sugar, and brown sugar until smooth.
  4. Add in the egg, vanilla extract, and brewed coffee; mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Drop tablespoons of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are set.
  9. Let cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.

Notes

  • For an extra kick, sprinkle some coffee grounds on top before baking.
  • Chill the dough for 30 minutes if it’s too soft to handle.
