Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the pumpkin puree, granulated sugar, eggs, and vegetable oil until well combined.
  3. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. In a separate bowl, beat the softened cream cheese until smooth.
  6. Fill each muffin liner halfway with the pumpkin batter, then add a dollop of cream cheese, and top with more batter.
  7. Use a toothpick to swirl the cream cheese into the muffin batter slightly.
  8. Bake for 20-25 minutes, or until a toothpick comes out clean.
  9. Allow muffins to cool before serving.
