- 2 cups cooked rotisserie chicken, shredded
- 1 cup sliced mushrooms
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- In a large pot, heat olive oil over medium heat. Add the onions and cook until translucent.
- Add the garlic and mushrooms, and sauté until mushrooms are tender.
- Pour in the chicken broth and bring to a boil.
- Stir in the shredded rotisserie chicken and thyme.
- Reduce heat and simmer for 10 minutes.
- Add the heavy cream and season with salt and pepper. Heat through and serve hot.
