  • 3 large eggs
  • 1 cup granulated sugar
  • 2/3 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 8 ounces cream cheese
  • 4 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 15×10 inch jelly roll pan and line it with parchment paper.
  2. In a bowl, mix together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat eggs and sugar together until thick. Add in the pumpkin and vanilla, then gradually mix in the dry ingredients.
  4. Spread the batter evenly in the prepared pan and bake for 13-15 minutes.
  5. Once baked, remove from oven and let cool slightly. Invert onto a clean towel dusted with powdered sugar.
  6. In a bowl, mix cream cheese, butter, powdered sugar, and vanilla until smooth. Spread over the cooled cake.
  7. Roll the cake with the towel inside and refrigerate for at least one hour before slicing.
