Pumpkin Chili

This pumpkin chili combines hearty flavors with a unique twist, featuring turkey bacon for a deliciously comforting dish.

  • 1 tablespoon olive oil
  • ½ pound turkey bacon
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (15 ounces) pumpkin puree
  • 2 cups vegetable broth
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup corn kernels

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add turkey bacon and cook until crispy. Remove and chop into pieces.
  3. In the same pot, add onions and garlic, sauté until translucent.
  4. Stir in pumpkin puree, vegetable broth, black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Bring to a simmer.
  5. Add corn and cooked turkey bacon. Stir well and let simmer for 20-30 minutes.
  6. Serve hot, optionally garnished with avocado or cilantro.

Notes

  • This chili can be made ahead of time and tastes even better the next day.
  • Feel free to customize with your favorite beans or add more vegetables.
