  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1/2 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, mix together the flour, ground pistachios, baking powder, baking soda, and salt.
  3. In another large bowl, cream the butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, then mix in the vanilla extract.
  5. Gradually mix in the dry ingredients until just combined.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  8. Let the cakes cool for 10 minutes, then remove from pans and cool completely.
  9. In a bowl, whip the heavy cream and powdered sugar until thick.
  10. Once cooled, layer the cakes with mascarpone and whipped cream mixture in between.
