OUTBACK POTATO SOUP

  • 4 large russet potatoes
  • 1/2 cup turkey bacon, diced
  • 1/2 cup chicken ham, diced
  • 1 cup onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup green onions, sliced
  • 1 tablespoon garlic, minced
  • to taste salt and pepper

Instructions

  1. Peel and chop the potatoes into small cubes.
  2. In a large pot, cook the turkey bacon until crispy.
  3. Add the onion and garlic, sauté until softened.
  4. Stir in the chicken ham, then add the potatoes and chicken broth.
  5. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  6. Add the heavy cream and cheese, stirring until melted.
  7. Season with salt and pepper to taste.
  8. Garnish with green onions before serving.
