Instructions

  3. In another bowl, whisk together the melted butter, eggs, milk, lemon juice, and lemon zest.
  4. Combine the wet and dry ingredients, mixing until just incorporated.
  5. Fold in the lemon curd gently into the batter.
  6. Fill the muffin cups about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Let them cool before serving.
