Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another mixing bowl, cream together the granulated sugar and softened butter until light and fluffy.
  4. Add the eggs, lemon zest, lemon juice, and vanilla extract to the creamed mixture, mixing until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Chill dough in the refrigerator for at least 30 minutes.
  7. Roll the dough into balls and coat in powdered sugar.
  8. Place the cookies on the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are set and the tops have crinkled.
  10. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
