  • 1/2 cup granulated sugar
  • 2 cups heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup milk

Instructions

  1. In a bowl, combine sliced strawberries with sugar and let sit for 30 minutes to macerate.
  2. In a separate bowl, whip heavy cream with powdered sugar and vanilla until soft peaks form.
  3. Preheat oven to 425°F (220°C).
  4. In a mixing bowl, combine flour, baking powder, and salt. Cut in butter until mixture resembles coarse crumbs.
  5. Add milk and mix just until combined. Do not overmix.
  6. Turn the dough out onto a floured surface and gently knead a few times. Roll out to about 1 inch thick.
  7. Cut out shortcakes using a biscuit cutter and place on a baking sheet.
  8. Bake for 12-15 minutes or until golden brown.
  9. Let shortcakes cool slightly before slicing in half.
  10. Top each shortcake half with macerated strawberries and whipped cream, then sandwich together.
