- 2 cups fresh strawberries, hulled and sliced
- 1/2 cup granulated sugar
- 2 cups heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 3/4 cup milk
- In a bowl, combine sliced strawberries with sugar and let sit for 30 minutes to macerate.
- In a separate bowl, whip heavy cream with powdered sugar and vanilla until soft peaks form.
- Preheat oven to 425°F (220°C).
- In a mixing bowl, combine flour, baking powder, and salt. Cut in butter until mixture resembles coarse crumbs.
- Add milk and mix just until combined. Do not overmix.
- Turn the dough out onto a floured surface and gently knead a few times. Roll out to about 1 inch thick.
- Cut out shortcakes using a biscuit cutter and place on a baking sheet.
