  • 5 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon green food coloring
  • 1 cup whipped cream
  • 1/4 cup red candy melts
  • 1/4 cup green sprinkles

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of mini cupcake liners.
  3. In another bowl, beat together cream cheese and powdered sugar until smooth. Add vanilla extract and green food coloring, mix until combined.
  4. Fold in whipped cream until just incorporated.
  5. Pour the cheesecake mixture over the crusts and bake for 15 minutes.
  6. Let the cheesecakes cool, then refrigerate for at least 2 hours.
  7. Once chilled, drizzle melted red candy on top and sprinkle with green sprinkles.
