  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup honey or maple syrup

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, combine the pumpkin puree, Greek yogurt, and eggs.
  3. In another bowl, mix the flour, oats, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  5. Fold in the honey or maple syrup until evenly distributed.
  6. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
