Fresh Raspberry Cloud Mousse

  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin
  • 3 tablespoons water

Instructions

  1. In a small bowl, sprinkle gelatin over water and let it bloom.
  2. In a blender, puree raspberries until smooth.
  3. In a mixing bowl, whip heavy cream until soft peaks form.
  4. Gradually add powdered sugar and vanilla to the whipped cream, continuing to whip.
  5. Gently fold in raspberry puree and the bloomed gelatin until well combined.
  6. Transfer the mousse to serving dishes and refrigerate for at least 2 hours.
