  • 2 pounds beef chuck, cut into 1-inch cubes
  • 6 slices turkey bacon, chopped
  • 4 cups onions, thinly sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add the beef and sear until browned on all sides.
  3. Add onions and garlic, cooking until they are soft.
  4. Stir in the tomato paste, thyme, and bay leaf.
  5. Pour in the beef broth and red wine, scraping up any browned bits.
  6. Return the bacon to the pot, bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  7. Season with salt and pepper before serving.
