Forgotten Chicken and Rice

A comforting and rich dish that effortlessly combines tender chicken and flavorful rice.

Ingredients

  • 4 chicken thighs
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large Dutch oven, layer the rice at the bottom.
  3. Add the chopped onion, garlic, and spices on top of the rice.
  4. Place the chicken thighs over the rice mixture.
  5. Pour the chicken broth over everything, and add the bay leaf.
  6. Cover and bake for 1.5 hours.
  7. Remove from the oven, discard the bay leaf, and fluff the rice before serving.

Notes

  • For added flavor, marinate the chicken overnight with spices.
  • Serve with a side of steamed vegetables.
