Forgotten Chicken and Rice

Ingredients

  • 4 chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large baking dish, combine the rice, onion, garlic, paprika, salt, and pepper.
  3. Place the chicken thighs on top of the rice mixture.
  4. Pour the chicken broth over everything.
  5. Cover the dish with aluminum foil and bake for 1 hour.
  6. Remove the foil, add the frozen peas, and bake for an additional 15 minutes.

Notes

  • This dish can be prepared in advance and left to bake later.
  • For added flavor, marinate the chicken in your favorite spices.
