Forgotten Chicken and Rice

A delicious and easy one-pot meal that brings the family together.

  • 4 pieces chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 cup frozen peas
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large oven-safe pot, heat olive oil over medium heat and add onions and garlic, sautéing until softened.
  3. Add the chicken thighs and cook until browned on both sides.
  4. Stir in rice, chicken broth, paprika, black pepper, and salt.
  5. Bring to a simmer, then cover and transfer to the oven.
  6. Bake for about 45 minutes or until the chicken is cooked through and the rice is tender.
  7. Stir in frozen peas and let sit for 5 minutes before serving.

  • For extra flavor, marinate the chicken in spices the night before.
