  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar

  • 1 teaspoon vanilla extract
  • 1/4 cup strong brewed espresso
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add the egg, vanilla extract, and espresso to the butter mixture and combine well.
  5. Gradually add the dry ingredients to wet ingredients until well incorporated.
  6. Fold in the chocolate chips.
  7. Drop tablespoon-sized balls of dough onto a baking sheet.
  8. Bake for 10-12 minutes, until cookies are set.
  9. Let cool on a wire rack before serving.
