Easy Chicken Burrito Casserole

A delicious and simple chicken burrito casserole that the whole family will love.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 3 cups tortilla chips, crushed
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 avocado, sliced

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, cumin, and chili powder.
  3. Layer half of the crushed tortilla chips in a greased baking dish.
  4. Add half of the chicken mixture on top of the chips.
  5. Sprinkle half of the shredded cheese over the chicken mixture.
  6. Repeat the layers with the remaining ingredients.
  7. Cover with foil and bake for 20 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  9. Remove from the oven and let cool slightly before serving. Top with sour cream and avocado slices.

Notes

  • This casserole can be made ahead of time and refrigerated before baking.
  • Feel free to add your favorite toppings, such as jalapeños or cilantro.
