Crispy Chicken Taquitos

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese
  • 1/2 cup salsa
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 tablespoon olive oil
  • 8 small tortillas
  • 1 avocado, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the chicken, cheese, salsa, garlic powder, and cumin.
  3. Heat the tortillas in a pan until warm.
  4. Fill each tortilla with the chicken mixture and roll them tightly.
  5. Place the taquitos seam-side down on a baking sheet.
  6. Brush with olive oil and bake for 20 minutes or until golden brown.
  7. Serve with avocado slices.

Notes

  • For extra crunch, broil the taquitos for the last 2 minutes.
  • Serve with a side of sour cream or guacamole.
