  • 2 tablespoons olive oil
  • 1 pound chicken breast, diced
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the orzo according to package instructions, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat and add the chicken. Cook until browned.
  3. Add garlic and sun-dried tomatoes to the skillet, cooking for another 2 minutes.
  4. Stir in the spinach, cooking until wilted.
  5. Pour in the heavy cream and add Parmesan cheese, stirring until melted and combined.
  6. Mix in the cooked orzo and season with Italian seasoning, salt, and pepper.
  7. Serve hot, garnished with extra Parmesan if desired.

Notes

  • For a lighter version, substitute heavy cream with half-and-half.
  • Feel free to add other vegetables like mushrooms or bell peppers.
