Creamy Alfredo Lasagna Soup

  • 1 pound Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 12 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the Italian sausage over medium heat. Drain excess fat.
  2. Add onions and garlic, cooking until soft.
  3. Stir in chicken broth and bring to a boil.
  4. Add heavy cream and lasagna noodles. Simmer until noodles are cooked.
  5. Stir in ricotta, mozzarella, and Parmesan cheeses until melted.
  6. Season with Italian seasoning, salt, and pepper. Serve hot.

Notes

  • This soup can be made ahead and reheated.
  • For a vegetarian version, omit the sausage and add more vegetables.
