An easy and delicious Cowboy Rice Casserole with turkey bacon and chicken ham that is perfect for any comfort food craving.

  • 1 cup rice
  • 4 slices turkey bacon
  • 1 cup chicken ham
  • 2 cups chicken broth
  • 1 cup shredded cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pan, cook the turkey bacon until crispy, then remove and crumble.
  3. Add the chicken ham and cook until heated through.
  4. In a baking dish, combine the rice, chicken broth, crumbled bacon, chicken ham, cheese, and spices.
  5. Mix well and cover with foil.
  6. Bake for 25-30 minutes until the rice is tender.
  7. Remove the foil and bake for an additional 5-10 minutes until the cheese is bubbly.

Notes

  • For a spicier version, add jalapeños or hot sauce.
