Cowboy Butter Steak Linguine with Roasted Carrots & Parsley Recipe

Delicious and easy Cowboy Butter Steak Linguine topped with roasted carrots and parsley.

  • 8 ounces linguine
  • 1 pound steak
  • 2 tablespoons cowboy butter
  • 1 pound carrots
  • 2 tablespoons olive oil
  • 1/4 cup chopped parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cook the linguine according to package instructions.
  3. In a bowl, toss the carrots with olive oil and roast for 20 minutes.
  4. Season the steak with salt and cook it in a skillet until your desired doneness.
  5. Add the cowboy butter to the skillet during the last few minutes of cooking.
  6. Mix the cooked linguine with the steak juices and roasted carrots.
  7. Garnish with parsley and serve.

Notes

  • For extra flavor, add garlic to the butter.
  • Serve with a side salad.
