  • 1 cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and ground cinnamon.
  3. In another bowl, combine the melted butter, eggs, and milk.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. In a separate bowl, mix the brown sugar and ground cinnamon for the filling.
  6. Fill each muffin cup halfway with batter, then sprinkle with the cinnamon-sugar mixture and a few pecans, if using.
  7. Top with remaining batter and swirl the top lightly with a knife to combine the filling.
  8. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let cool for a few minutes before serving.
