Christmas Spice Cake with Eggnog Buttercream

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups brown sugar, packed
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 2 cups powdered sugar
  • 1/2 cup eggnog
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, baking soda, spices, and salt.
  3. In a separate bowl, beat butter and sugar until fluffy. Add eggs and vanilla.
  4. Gradually add the flour mixture and buttermilk, alternating between the two.
  5. Pour the batter into prepared cake pans and bake for 25-30 minutes.
  6. Let the cakes cool completely before frosting.
  7. For the frosting, beat together powdered sugar, eggnog, and heavy cream until smooth.
  8. Spread the frosting generously on top of the cooled cakes.
