  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 3 cups all-purpose flour
  • 1 cup cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup crushed peppermint candies

Instructions

  1. Cream together the butter and sugars until light and fluffy.
  2. Add the eggs, vanilla, and peppermint extracts and mix well.
  3. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  5. Stir in the chocolate chips.
  6. Chill the dough for at least 1 hour.
  7. Preheat the oven to 350°F (175°C).
  8. Roll the dough into balls and place them on a baking sheet.
  9. Bake for 10-12 minutes.
  10. Remove from the oven and immediately press a peppermint candy into the center of each cookie.
  11. Allow to cool on a wire rack.

Notes

  • These cookies can be stored in an airtight container for up to a week.
  • For a more intense peppermint flavor, add additional crushed candy to the top before baking.
