Chocolate Mint Kiss Crinkles

  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup powdered sugar for rolling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream together the butter, sugar, and brown sugar until light and fluffy.
  4. Add the egg, vanilla extract, and peppermint extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and stir in the chocolate chips.
  6. Chill the dough for 30 minutes in the refrigerator.
  7. Roll the dough into balls and then roll in powdered sugar.
  8. Place on a baking sheet and bake for 10-12 minutes.
  9. Allow to cool before serving.

Notes

  • For a stronger mint flavor, increase the peppermint extract to 3/4 teaspoon.
  • These cookies pair well with ice cream.
