  • 4 medium russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1 small onion, diced
  • 1 packet taco seasoning
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake for about 45-60 minutes until tender.
  3. In a pan, sauté the diced onion until translucent.
  4. Slice the baked potatoes in half and scoop out some of the flesh.
  5. Mix the scooped potato with turkey bacon, taco seasoning, and sour cream.
