  • 1/2 cup brown sugar
  • 1 large egg

  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the Biscoff cookie butter, granulated sugar, and brown sugar until smooth.
  3. Add the egg and vanilla extract, and mix until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. If using, fold in the chocolate chips.
  7. Drop tablespoon-sized balls of dough onto the prepared baking sheet.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

  • For best results, let the cookie dough chill in the refrigerator for 30 minutes before baking.
