Bibingka – Filipino Coconut Cake

  • 1 cup coconut milk
  • 1 cup sugar
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 2 eggs
  • 1 cup shredded coconut
  • ½ cup butter, melted
  • 1 cup water

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the rice flour, sugar, baking powder, and salt.
  3. Add the eggs, coconut milk, melted butter, and water to the dry ingredients and mix well.
  4. Fold in the shredded coconut.
  5. Pour the batter into a greased baking dish.
  6. Bake for 25-30 minutes or until golden brown.
  7. Let it cool before slicing and serving.
