- 2 ripe bananas
- 1 cup rolled oats
- 1/2 cup honey or maple syrup
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup yogurt or applesauce
- 1/4 cup walnuts, chopped (optional)
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, mash the ripe bananas until smooth.
- Add the rolled oats, honey or maple syrup, cinnamon, salt, baking powder, and yogurt or applesauce to the mashed bananas and mix well.
- If using, fold in the chopped walnuts.
- Divide the mixture evenly among the muffin cups.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool for a few minutes before removing them from the tin.
Notes
- These muffins are best enjoyed fresh but can be stored for up to 3 days in an airtight container.
- For a healthier version, substitute honey with applesauce.
