Banana Oatmeal Muffins

Start your day with these easy and healthy banana oatmeal muffins that are perfect for breakfast.

Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup yogurt or applesauce
  • 1/4 cup walnuts, chopped (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the rolled oats, honey or maple syrup, cinnamon, salt, baking powder, and yogurt or applesauce to the mashed bananas and mix well.
  4. If using, fold in the chopped walnuts.
  5. Divide the mixture evenly among the muffin cups.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool for a few minutes before removing them from the tin.

Notes

  • These muffins are best enjoyed fresh but can be stored for up to 3 days in an airtight container.
  • For a healthier version, substitute honey with applesauce.
