  • 1 large egg
  • 1/4 cup vegetable oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a saucepan, boil the apple cider until it reduces to about 1/2 cup.
  3. In a bowl, whisk together the dry ingredients: flour, sugars, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In another bowl, mix the egg, oil, vanilla, and reduced apple cider until well combined.
  5. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  6. Fill the muffin tin with batter and bake for 12-15 minutes, or until a toothpick comes out clean.
  7. Let cool slightly, then dip the tops in melted butter and roll in sugar and cinnamon mix.
